Typical for a ‘way-way’ this bean has nuanced fruit and a nice brightness; tannic grape, floral aromatics, and sweet malt syrup roast taste. A tad further in the roast, at the Full City level, there is a unique balance between chocolate-covered raspberry with a hint of lemon and spice, and a floral flavor. A mélange, two or more roasts of the same bean, yields a wonderful cup.

After trying many of the coffees offered by The Excellent Cup this is my absolute favorite. The Guatemala is sweet and fruity with a hint of chocolate. I order a pound each time I place an order. This coffee is the bomb!

This is an excellent coffee. The Coban Santa Sofia Lot #3 comes as advertised with a lighter body than some of the other available roasts. I find that it brews up very nicely and produces a very smooth tasting cup of coffee.

This Guatemala Coban is roasted light enough to produce a sweet cup, but is fully developed without any unripe notes. It is clean with a light, sweet apricot note while hot and as the coffee cooled, the stone fruit elements started tasting more like ripe plum. This is the favorite of the two coffees I’ve tried from the Excellent Cup so far.
